Minty Chippy Blondies
Ingredients
- 6 tablespoons butter, softened
- 1 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup of mint chocolate chips (or you can substitute regular chips, butterscotch, or whatever flips your lid)
- In a large mixing bowl, cream butter and brown sugar until light and fluffy. Add the eggs, one at a time, beating well. Beat in vanilla.
- Combine flour, baking powder and salt. Gradually add to the creamed mixture until blended. Stir in chocolate chips
- Spread into a greased 11x7 baking pan. Bake at 350 degrees for 25-30 minutes or until toothpick inserted in center comes out clean. Cool on a wire rack.
